S’mores Sweet Potato Brownies

Brownie Batter
sweet potato (mashed)
240 ml
cocoa powder (unsweetened)
40 g
peanut butter
60 ml
egg

maple syrup (pure)
30 ml
vanilla extract
5 ml
baking soda
1 ml
salt
0.5 g
Toppings
dark chocolate chunks
80 g
graham crackers (crushed)

marshmallows
24 piece
Instructions
Preheat oven
Preheat the oven to 175°C and line a square baking dish with parchment paper.
Mix brownie batter
Combine mashed sweet potato, cocoa powder, peanut butter, eggs, maple syrup, vanilla extract, baking soda, and salt in a large bowl. Mix until smooth.
Add chocolate and crackers
Fold in dark chocolate chunks and crushed graham crackers into the batter.
Bake brownies
Pour batter into the prepared baking dish and bake at 175°C for 25 minutes.
Add marshmallows and broil
Top the baked brownies with 24 marshmallows and broil for 2 minutes until golden brown. Watch carefully.
Cool and serve
Remove from oven and let cool for at least 1 hour before slicing and serving.
