Melt the butter
Melt the butter in a small saucepan or microwave until completely liquid.

In a large bowl, whisk together the eggs, sugar, vanilla essence, melted butter and milk until smooth.

Sift the flour and baking soda into the wet mixture and stir gently until just combined. Do not overmix.
