Homemade Pasta
Ingredients
Dough
all-purpose flour
300 g
egg

olive oil
15 ml
salt

Sauce
olive oil
30 ml
garlic

tomato
400 g
salt

black pepper
2 g
fresh basil
10 g
Instructions
Make the pasta dough
Mix flour, eggs, olive oil and salt to form a smooth dough.
Knead and rest the dough
Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Wrap and rest for 30 minutes.
Roll and cut the pasta
Roll out the dough thinly and cut into desired shapes (fettuccine, tagliatelle, etc.).
Prepare the tomato sauce
Heat olive oil in a pan, add minced garlic and cook until fragrant. Add chopped tomatoes, salt and pepper. Simmer for 15 minutes.
Cook the pasta
Bring a large pot of salted water to a boil. Add fresh pasta and cook for 2-3 minutes until al dente. Drain.
Combine and serve
Toss the cooked pasta with the tomato sauce. Garnish with fresh basil and serve immediately.

Storage
Fresh pasta can be stored in the fridge for up to 2 days or frozen for up to 1 month. Sauce stores separately for 3-4 days in the fridge.
