One Pot Creamy French Onion Pasta

Instructions
Caramelize onions
Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook slowly until golden and caramelized.
Add garlic and herbs
Stir in minced garlic and thyme sprigs. Cook for 1 minute until fragrant.
Cook pasta
Add pasta, vegetable broth, salt and pepper. Bring to a boil, then simmer until pasta is al dente, stirring occasionally.
Finish with cream and cheese
Reduce heat to low. Stir in heavy cream and grated parmesan until the sauce thickens and coats the pasta. Remove thyme sprigs before serving.
