Prepare ingredients

Mince the garlic cloves and chop the fresh parsley. Grate the parmesan cheese if not pre-grated.

Boil pasta water

Bring a large pot of water to a rolling boil. Add salt generously - the water should taste like seawater.

Cook pasta

Add spaghetti to the boiling salted water and cook according to package directions until al dente.

Prepare garlic oil

While pasta cooks, heat olive oil in a large pan over medium heat. Add minced garlic and cook gently until fragrant and lightly golden.

Add chili and combine

Add red chili flakes to the garlic oil and stir for 30 seconds. Add drained pasta directly to the pan along with a splash of pasta water.
