High Protein Mexican Style Chicken & Rice Meal Prep

Chicken Breast (raw, cubed)

Basmati Rice (uncooked, washed)

Oregano (dried)

Garlic Powder

Lime (juiced)
1 whole
Olive Oil
2 tsp
Liquid
Chicken Stock
300 ml
Garnish
Cilantro (chopped)

Instructions
Prepare the chicken
Cut chicken breast into cubes and season with oregano, garlic powder, paprika, cumin, chili powder, salt, pepper and lime juice.
Sauté vegetables
Heat olive oil in a pan, add chopped onion and red bell pepper and cook until softened.
Toast the rice
Add washed basmati rice and 1 tsp of each seasoning to the pan with vegetables. Toast for 1-2 minutes to enhance flavor.
Simmer the rice
Add chicken stock or water, mix well, cover and simmer on low heat for 12-15 minutes. Stir halfway through.
Cook the chicken
Add seasoned chicken cubes to the rice mixture, cover and cook until chicken is fully cooked through.
Finish and serve
Stir in black beans and garnish with chopped cilantro. Serve hot or portion into meal prep containers.
