Crispy Chicken Caesar Sandwich

Caesar Salad
lettuce (washed, chopped)

Instructions
Season the chicken
Season chicken breast with salt, pepper, garlic powder, and smoked paprika. Marinate for 1 hour in refrigerator.
Prepare dry batter
Mix all purpose flour with salt, pepper, garlic powder, and smoked paprika in a wide bowl.
Prepare breadcrumbs mixture
Mix panko breadcrumbs with dried parsley in a separate bowl.
Prepare egg wash
Crack egg into a bowl, add water, and whisk until smooth and well combined.
Bread the chicken
Coat chicken in dry batter, then egg wash, then dry batter again, then egg wash again, and finally breadcrumbs. Repeat for all pieces.
Fry the chicken
Heat oil in pan to 177°C. Add breaded chicken and cook 4-5 minutes, flipping halfway, until internal temperature reaches 74°C.
Make Caesar dressing
Mix mayonnaise, Dijon mustard, Worcestershire sauce, salt, pepper, lemon juice, minced garlic, olive oil, and Parmesan cheese until well combined. Reserve half the dressing.
Dress the lettuce
Add chopped lettuce to remaining dressing and toss until well coated.
Toast the bread
Butter the mini loaves and toast until golden and crispy.
Assemble the sandwiches
Spread Caesar dressing on toasted bread, add breaded chicken, top with Caesar salad, garnish with Parmesan, and close sandwich.
