Prepare Chicken Marinade

In a blender or food processor, combine honey, chipotle peppers with adobo sauce, garlic cloves, lime juice, olive oil, and salt. Blend until smooth.

Marinate Chicken

Cut chicken breast into thin strips or bite-sized pieces. Add to the marinade and toss to coat evenly. Let marinate for 15-30 minutes.

Cook Chicken

Heat a skillet over medium-high heat with a little oil. Add marinated chicken and cook for 6-8 minutes, stirring occasionally until caramelized and cooked through (internal temp 75°C).

In a small bowl, mix sour cream, mayonnaise, finely chopped chipotle pepper, lime juice, and salt until smooth and creamy.

Warm tortillas in microwave or skillet. Slice tomato and red onion thinly. Separate lettuce leaves.

Spread chipotle crema on each tortilla. Add lettuce, sliced veggies, and honey chipotle chicken. Roll tightly into wraps. Slice in half if desired.
