Juicy Soup Dumplings with Spicy Turkey Noodles

Instructions
Prepare the dumpling dough
Mix flour with salt and warm water to form a smooth dough.
Rest the dough
Cover the dough and let it rest for 20 minutes to become elastic.
Make the spicy turkey filling
Combine ground turkey with minced ginger, garlic, green onions, chicken broth, soy sauce, sesame oil and chili flakes.
Shape the dumplings
Divide the rested dough into small pieces, roll each into a thin circle, place 1 tablespoon of filling in the center and pleat the edges to seal.
Steam the dumplings
Place dumplings in a steamer lined with parchment and steam over boiling water for 10-12 minutes until cooked through.
Cook the noodles
Boil the wheat noodles in salted water until al dente, then drain and rinse briefly with cold water.
Make the spicy noodle sauce
Heat chili oil in a pan, add minced garlic, soy sauce and toss with the cooked noodles.
Serve
Plate the spicy noodles and top with hot soup dumplings. Serve immediately while hot.
