Instructions
Prepare ingredients
Measure all ingredients and melt the butter to 85-95°C.
Mix wet ingredients
Combine melted butter, both sugars, egg yolk, heavy cream, and vanilla paste until smooth.
Add dry ingredients
Add flour, salt, and baking soda to the wet mixture and stir until just combined.
Add chocolate
Fold in the bittersweet chocolate pieces until evenly distributed.
Shape cookies
Scoop dough onto parchment-lined baking sheet, forming 12 cookies.
Bake cookies
Bake in preheated oven until edges are golden but centers are still soft.
