No-Bake Lemon Slice
Ingredients
Base
digestive biscuits
400 g
butter (melted)
200 g
sweetened condensed milk
300 g
lemon (zest)

Lemon Icing
pure icing sugar
300 g
butter (softened)
20 g
lemon (juice)
2.5 tbsp
Instructions
Prepare biscuit crumbs
Blitz the biscuits in a food processor until they look like sand.
Mix base ingredients
Pour in the melted butter, sweetened condensed milk, and lemon zest, then mix again until well combined.
Press into tray
Press the mixture into a lined slice tray and smooth it out evenly. Pop it in the fridge while you make the icing.
Make lemon icing
Whisk together the icing sugar, butter, and lemon juice until smooth.
Ice and set
Pour over the chilled biscuit base and spread evenly. Pop back in the fridge until set.
Slice and serve
