Instructions
Prepare the dough
Combine flour, lukewarm milk, water, egg white, instant yeast, sugar, and butter in a large bowl or stand mixer. Mix until a dough forms, then knead until smooth and elastic.
Let the dough rise
Transfer the dough to a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
Make the burger sauce
Combine mayonnaise, ketchup, mustard, and finely chopped pickles in a small bowl. Mix well and set aside.
Prepare the beef patties
Divide the ground beef into 4 patties and season with salt and pepper. Sear in a hot pan for about 1 minute per side, just until browned on the outside. Remove from the pan and set aside.
Caramelize the onions
In the same pan, melt a little butter and add the sliced onions. Cook until soft and caramelized, then remove from the heat and set aside.
Shape the dough
Divide the risen dough in half. Roll each half into a large circle about ¼ inch thick, then gently lay each piece into a bowl to help form the shape of the hidden burger.
Assemble the hidden burgers
In each dough-lined bowl, layer a slice of cheese, a burger patty, caramelized onions, burger sauce, a second burger patty, pickles, and another slice of cheese.
Seal the burgers
Pull the edges of the dough up and over the filling, then firmly pinch the seams together to completely seal everything inside. Carefully flip onto a parchment-lined baking sheet with the seam side down.
Add egg wash and sesame seeds
Brush the outside of each hidden burger with egg wash and sprinkle generously with sesame seeds.
Bake the hidden burgers
Bake at 175°C for about 25 minutes, or until the bread is puffed and golden brown and the beef is fully cooked through.
Cool and serve
Let cool slightly before slicing open, then serve and enjoy this completely contained, cheese-filled hidden burger!
