Instructions
Prepare Chicken
Cut chicken breast into thin strips or small cubes. Season with salt and pepper.
Cook Chicken and Pepper
Heat a pan over medium heat. Add a little oil, cook chicken strips until golden and cooked through (about 8-10 minutes). Add sliced red bell pepper in the last 3 minutes.
Mix Cheeses
In a bowl, combine cream cheese and cottage cheese. Mix until smooth. Add cooked chicken and peppers, mix well.
Assemble Quesadillas
Spread cheese-chicken mixture on one side of each tortilla wrap. Sprinkle with grated mozzarella. Fold in half.
Cook Quesadillas
Heat a clean pan over medium heat. Cook each quesadilla for 2-3 minutes per side until golden and crispy. Press gently with spatula.
Serve
Cut quesadillas in half and serve hot. Optional: serve with salsa or guacamole.
