Instructions
Prepare Ingredients
Chop onions, tomatoes, mince garlic and ginger, slit green chilies.
Heat Oil
Heat oil in a heavy-bottomed pan over medium flame.
Sauté Onions
Add chopped onions and sauté until golden brown.
Add Ginger-Garlic
Add minced ginger and garlic, sauté for 1 minute until fragrant.
Add Dry Spices
Add cumin, coriander, turmeric, red chili powder and salt. Stir quickly.
Add Tomatoes
Add chopped tomatoes and cook until they break down and oil separates.
Add Chicken
Add chicken pieces and coat well with the masala.
Simmer the Curry
Add water, cover and simmer on low heat until chicken is cooked through.
Finish and Garnish
Add garam masala, black pepper, slit green chilies and fresh cilantro. Mix well.
Serve Hot
Serve the village style chicken curry hot with rice or bread.
