Pasta with Red Pesto & Crispy Bacon

Instructions
Boil Water for Pasta
Bring water to a boil in a large pot. Add salt and pasta. Cook according to package instructions until al dente.
Prepare Red Pesto
In a blender or food processor, combine sun-dried tomatoes, garlic clove, pine nuts, fresh basil, olive oil, salt, and pepper. Blend until smooth to form a pesto.
Cook Crispy Bacon
Heat a little oil in a pan over medium heat. Add bacon and fry until crispy. Remove and set aside.
Combine Pasta with Pesto
Drain pasta, reserving some pasta water. Add pasta to the pan, stir in the red pesto, and add a splash of pasta water to loosen the sauce. Mix well.
Serve
Plate the pasta, top with crispy bacon and fresh basil leaves.
