Instructions
Prepare vegetables
Slice the onions and cut the potatoes into thin matchsticks. Mince the garlic.
Fry the potatoes
Deep-fry or shallow-fry the potato sticks until golden and crispy. Drain on paper towels.
Sauté onion and garlic
In a large pan, sauté the sliced onions and minced garlic in olive oil until soft and fragrant.
Add the cod
Add the flaked cod to the pan with the onions and garlic. Stir gently to combine and heat through.
Add the eggs
Beat the eggs and pour them over the cod mixture. Stir gently until the eggs are just set but still creamy.
Combine with potatoes
Gently fold in the fried potato sticks. Mix carefully to avoid breaking the potatoes.
Garnish and serve
Garnish with chopped parsley and black olives. Serve hot directly from the pan.
