Green Beans Salad

Instructions
Prepare the green beans
Trim the ends of the green beans and cut them into 4-5 cm pieces.
Blanch the green beans
Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until crisp-tender. Drain and immediately plunge into ice water to stop cooking.
Prepare the vegetables
Halve the cherry tomatoes and thinly slice the red onion. Mince the garlic.
Make the dressing
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt and black pepper.
Assemble the salad
In a large bowl, combine the blanched green beans, halved cherry tomatoes and sliced red onion. Pour over the dressing and toss gently to coat.
Serve
Transfer to a serving plate. The salad can be served immediately or chilled for 15 minutes for enhanced flavor.
