salmon fillets (skin on or off)

Prepare lemon garlic marinade

Mix lemon zest, lemon juice, olive oil, dijon mustard, grated garlic, salt and pepper in a bowl.

Coat salmon with marinade

Slather the lemon garlic marinade on the top and sides of each salmon fillet. Use all the paste.

Optional marinating

Marinate salmon for 1 hour if time permits for deeper flavour. Otherwise proceed to next step.

Prepare vegetables

Toss asparagus and cherry tomatoes with olive oil, salt and pepper.

Arrange on baking tray

Place salmon fillets on tray with space between each. Arrange vegetables around salmon. Spray salmon with olive oil.

Grill/broil for 11 minutes until salmon is just cooked. Internal temperature should reach 50°C for juicy results.

Serve

Transfer salmon and vegetables to plates. Grate parmesan over vegetables. Squeeze lemon over everything and serve.
