Perfect Crispy French Fries

Instructions
Prepare potatoes
Peel the potatoes and cut them into even 1 cm thick sticks.
Soak potatoes
Place the potato sticks in a bowl of cold water with vinegar for 20 minutes. This removes excess starch for extra crispiness.
Dry potatoes
Drain and pat the potato sticks completely dry with a clean kitchen towel.
Heat oil
Heat the oil in a deep pot or wok to 160°C.
First fry
Fry the potatoes in batches for 6–7 minutes until they are pale and soft but not browned.
Rest and increase temperature
Remove the fries and let them rest for 5 minutes. Increase the oil temperature to 190°C.
Second fry
Return the fries to the hot oil and fry for another 3–4 minutes until golden and crispy.
Season and serve
Drain the fries on paper towels, season with salt and chili powder while hot, and serve immediately.
