Air Fryer Scoopable Chocolate Chip Cookies

unsalted butter (cold, cubed)

Instructions
Cream butter and sugars
Add the cold, cubed butter, brown sugar and caster sugar to a bowl. Mix gently with a whisk until creamy.
Add egg and vanilla
Add the egg and vanilla essence and whisk again until well combined.
Fold in dry ingredients
Add the all-purpose flour, baking powder, baking soda and salt. Fold gently until just combined.
Add chocolate chunks
Fold in the chopped couverture chocolate chunks.
Form cookie dough balls with chocolate center
Scoop out individual portions of dough and flatten each portion in the palm of your hand. Place a piece of couverture milk chocolate in the centre. Bring the dough around the chocolate and roll it into a ball, making sure the chocolate is completely enclosed.
Prepare for air frying
Place the cookie dough balls in a ceramic dish suitable for use in an air fryer. Refrigeration is optional - you can chill the dough balls for a while before baking.
Air fry the cookies
Air fry at 160°C for 10–12 minutes, or until done to your preference.
Serve with ice cream
Let the cookie cool slightly, then top with a scoop of vanilla ice cream.

Store in airtight container. Best served warm. Can be frozen as dough balls for up to 1 month.
