Bombay Sandwich with English Twist

green chili (finely chopped)

Instructions
Prepare the potatoes
Boil the potato until soft, then mash it with salt, pepper and finely chopped green chili.
Assemble the sandwich
Butter the bread slices, spread green chutney on two slices, layer the mashed potato mixture, onion, tomato, cucumber and cheese.
Grill the sandwich
Place the assembled sandwiches in a hot pan or sandwich press and grill until golden and crisp on both sides.
