Instant Pot Mango Sticky Rice

Instructions
Rinse the rice
Rinse the glutinous rice under cold water until the water runs clear.
Cook the rice
Place the rinsed rice and water into the Instant Pot. Cook on high pressure for 12 minutes, then allow natural pressure release for 10 minutes.
Prepare the coconut sauce
In a small saucepan, combine the light coconut milk, sugar, and salt. Heat gently while stirring until the sugar dissolves.
Combine rice and sauce
Pour the warm coconut sauce over the cooked rice. Stir gently to combine and let it rest for 5 minutes to absorb the flavors.
Prepare mango and serve
Peel and slice the ripe mango. Serve the sticky rice topped with mango slices.
Storage
Best served fresh, but can be refrigerated up to 2 days. Add a splash of coconut milk when reheating to restore creaminess.
