Instructions
Season the chicken
Season chicken breasts generously with salt, black pepper, garlic powder, onion powder, smoked paprika, Italian seasoning, and chili powder.
Prepare breading stations
Mix flour with remaining seasoning in one bowl. Whisk eggs, cream, and pickle juice in another bowl. Combine panko and parmesan in a third bowl.
Bread the chicken
Coat each piece of chicken in flour mixture, then egg mixture, then press into panko until fully coated.
Rest breaded chicken
Let the breaded chicken rest for 5–10 minutes so the coating sticks.
Fry the chicken
Fry in oil over medium heat until golden and cooked through, about 4–5 minutes per side. Remove and let drain.
Make Caesar dressing
Whisk together mayo, parmesan, garlic, lemon juice, Dijon, Worcestershire, salt, and pepper. Slowly whisk in olive oil, then add water if needed until smooth and pourable.
Prepare lettuce
Chop romaine lettuce and toss with some of the Caesar dressing.
Assemble wraps
Assemble the wraps with dressing, lettuce, crispy chicken, and extra parmesan. Wrap tightly and enjoy.
