Instructions
Activate yeast
Combine warm milk, sugar, and instant yeast in a large bowl.
Add wet ingredients
Add pumpkin purée, egg, and melted butter to the yeast mixture and mix well.
Form the dough
Stir in salt, pumpkin spice, and flour. Mix until a dough forms, starting with 400g flour and adding more if needed.
Knead the dough
Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic.
First rise
Place dough in a lightly greased bowl, cover, and let rise for 1-1.5 hours until doubled in size.
Prepare filling
Mix softened brown butter, brown sugar, cinnamon, and pumpkin spice until combined and spreadable.
Roll out dough
Roll the dough into a large rectangle on a lightly floured surface.
Spread filling
Spread the filling mixture evenly over the rolled-out dough.
Cut and roll
Cut the dough into 8 equal pieces using a pizza cutter, then roll each piece tightly.
Second rise
Place rolls in a greased 9x13 pan, cover, and let rise for about 35 minutes.
Add cream and bake
Pour warm heavy cream over the rolls, then bake at 175°C for 22-28 minutes until golden brown.
Make icing
Beat cream cheese and brown butter together until smooth, then beat in powdered sugar, vanilla, pumpkin spice, and salt.
Ice and serve
Spread the icing over the warm rolls and serve immediately.
