Pepperoni Pizza Casserole

Instructions
Cook the pasta
Boil the pasta in salted water until al dente.
Prepare the vegetables
Dice the onion and bell pepper, mince the garlic.
Sauté the vegetables
Heat olive oil in a pan and sauté onion, bell pepper and garlic until fragrant.
Make the sauce
Add tomato sauce, oregano, salt and pepper to the sautéed vegetables and simmer briefly.
Assemble the casserole
Combine cooked pasta with sauce, layer half the mozzarella and pepperoni in a baking dish.
Bake the casserole
Top with remaining cheese and pepperoni and bake until golden and bubbly.
