Garlic & Herb Butter Steak Bites over Mashed Potatoes

Steak Bites
sirloin steak (trimmed, cut into 2.5 cm pieces)

Worcestershire sauce

baguette (sliced)

Mashed Potatoes
russet potatoes (peeled, diced)

Instructions
Make Garlic Herb Butter
In a bowl, mix softened butter with Dijon mustard, chopped chives, parsley, minced garlic, lemon juice, cayenne, paprika, red pepper flakes, salt and pepper until well combined.
Prepare Steak Bites
Trim sirloin steak into 2.5 cm bite-sized pieces. Season with Worcestershire sauce, salt, pepper and steakhouse seasoning.
Sear Steak Bites
Heat olive oil in cast iron pan over medium-high heat. Add steak bites and sear 2 minutes without moving. Flip and sear another 2 minutes.
Finish Steak with Butter
Reduce heat to medium. Stir in 2 tablespoons garlic herb butter until melted and coating the steak. Remove steak to plate.
Sauté Asparagus
In the same pan, add asparagus and sauté 8 minutes until fork tender.
Prepare Garlic Bread
Slice baguette and brush slices with garlic herb butter.
Bake Garlic Bread
Bake at 200°C for 8-10 minutes until golden brown and crispy.
Boil Potatoes
Peel and dice potatoes. Boil in salted water until fork tender.
Mash Potatoes
Drain potatoes. Mash with heavy cream, salt and pepper until smooth and creamy.
Serve
Plate mashed potatoes, top with steak bites. Add remaining garlic herb butter and chopped chives. Serve with asparagus and garlic bread on the side.

Best served fresh. Reheat steak and vegetables together; reheat mashed potatoes separately with a splash of cream.
