Mix the egg base

Whisk together the eggs, hot water, chicken bouillon and chilli oil until well combined.

Strain the mixture

Strain the egg mixture through a sieve into a shallow heatproof bowl to remove any lumps for a silky texture.

Steam the eggs

Place the bowl into a steamer over simmering water and steam for 10-12 minutes until the eggs are just set with a slight wobble in the centre.

Top with spring onion greens and a drizzle of soy sauce. Serve immediately with a spoon over hot rice.
