Chicken Gnocchi Soup

celery (sliced)

tomato paste

chicken stock

water
600 ml
half & half
60 ml
garlic powder

dried oregano

shredded mozzarella

Parmesan (grated)
50 g
parsley (chopped)

Instructions
Prepare vegetables
Dice onion, mince garlic, slice carrots and celery.
Sauté vegetables
Sauté onion, garlic, carrots and celery until softened.
Add tomato paste and spices
Stir in tomato paste, garlic powder, oregano, salt and pepper.
Add stock and water
Pour in chicken stock and water; bring to a simmer.
Simmer the soup
Simmer gently for 15 minutes until vegetables are tender.
Finish with cream and cheese
Stir in half & half, then add mozzarella and Parmesan until melted.
Serve
Ladle into bowls and garnish with chopped parsley.

Storage
Reheat gently to avoid separating the cream. Add a splash of water if too thick.
