Instructions
Preheat oven
Preheat the oven to 180°C and line a baking sheet with parchment paper.
Mix butter and sugar
Mix the melted butter and sugar together for a couple of minutes until well combined.
Add egg and beat
Add the egg and beat on high speed for a few more minutes until the mixture becomes light and fluffy.
Add dry ingredients
Add flour, cocoa powder, baking powder, and salt. Mix just until combined. The mixture will start dry but continue mixing until it forms a cohesive dough.
Shape cookies
Scoop 1 tablespoon of dough per cookie onto the prepared baking sheet, spacing them apart. This recipe makes 12 cookies.
Bake cookies
Bake at 180°C for 11 minutes until the edges are set but centers are still slightly soft.
Cool cookies
Remove from oven and let cool on the baking sheet for 5-10 minutes to firm up before transferring.
