High Protein Potato Salad

Instructions
Boil potatoes
Wash and cut the potatoes into bite-sized pieces. Place in a pot of salted water and boil until tender.
Boil eggs
Place eggs in a pot, cover with water, and bring to a boil. Cook for 8-10 minutes, then cool under cold water and peel.
Prepare vegetables
Finely chop the onion and gherkins.
Mix dressing
In a bowl, combine skyr, mustard, pickle juice, salt, pepper, parsley, dill, and paprika. Mix well.
Combine and serve
Add the boiled potatoes, chopped eggs, onion, and gherkins to the dressing. Gently mix until everything is coated. Serve chilled.
