Avocado Sauce

Instructions
Cook the onions
Heat olive oil in a skillet and cook diced onion until translucent.
Brown the beef
Add ground beef to the skillet and cook until browned.
Add spices and tomato paste
Add all the spices and tomato paste, stir until well incorporated.
Simmer the filling
Add a splash of water, cover and let simmer until saucy.
Warm the tortillas
Warm flour tortillas slightly to make them flexible.
Fill and roll taquitos
Add beef filling and cheese to each tortilla, roll tightly and secure with toothpicks.
Fry the taquitos
Heat oil in skillet and fry taquitos seam-side down until golden and crispy.
Make avocado sauce
Blend avocado, garlic, mayonnaise, cilantro, lime juice, adobo, olive oil, salt and pepper until smooth.
