Double Chocolate Banana Bread

Instructions
Preheat oven and prepare pan
Preheat the oven to 175°C and line a 23x13 cm loaf pan with parchment paper.
Mash the bananas
In a large bowl, mash the ripe bananas with a fork until mostly smooth with some small chunks remaining.
Mix wet ingredients
Add melted butter, sugar, eggs, and vanilla extract to the mashed bananas and stir until well combined.
Combine dry ingredients
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Combine wet and dry ingredients
Gently fold the dry ingredients into the wet mixture until just combined - do not overmix.
Add chocolate chips
Fold in 120g of chocolate chips, reserving 30g for topping.
Bake the bread
Pour batter into prepared loaf pan and sprinkle remaining chocolate chips on top. Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
Cool and serve
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
