Filling

paneer (crumbled)

Instructions

Prepare the filling

Mix crumbled paneer with chopped green chilies, onion, cilantro, cumin, and salt.

Shape the vadas

Divide the filling into 4 portions and shape each into an oval or round patty.

Make the batter

In a bowl, whisk chickpea flour with water, salt, and turmeric until smooth and thick.

Heat the oil

Heat sunflower oil in a wok or deep pan over medium-high heat to 180°C.

Coat and fry the vadas

Dip each shaped vada in the batter, letting excess drip off, then carefully lower into hot oil.

Drain the vadas

Remove vadas from oil and place on paper towel to absorb excess oil.

Storage

Reheat: Air fryer 180°C 5 minutes or pan-fry
