50 g

active dry yeast

7 g

egg (room temperature)

1 piece

pure vanilla extract

15 ml

bread flour

300 g

salt

7 g

unsalted butter (softened)

60 g

Topping

30 ml

powdered sugar (sifted)

60 g

Instructions

1

Activate the yeast

Combine warm milk, sugar, and active dry yeast in a large mixing bowl. Let sit until foamy.

10 mintimer 10 min
The milk should be warm to the touch, about 38°C, not hot
2

Form the dough

Add egg and vanilla to the yeast mixture, then incorporate bread flour and salt until a shaggy dough forms. Add softened butter and knead until smooth.

15 min
Knead for a full 8-10 minutes to develop gluten for light, airy beignets
3

First rise and refrigeration

Place dough in a lightly oiled bowl, cover, and let rise until doubled. Then refrigerate for at least 1 hour or overnight.

150 mintimer 90 min
Overnight refrigeration develops better flavor and makes the dough easier to handle
4

Roll and cut the dough

Roll dough to ½ inch thickness on a floured surface. Cut into squares and let rest until slightly puffy.

35 mintimer 25 min
Keep the squares uniform in size for even frying
5

Fry the beignets

Heat oil to 177°C. Fry beignets in batches until golden brown on both sides. Drain on a rack.

15 minMedium-high heattimer 2 min
Don't overcrowd the fryer - work in small batches for even cooking
6

Finish and serve

Drizzle warm beignets with honey and generously dust with sifted powdered sugar. Serve immediately while warm.

5 min
Powdered sugar will melt if beignets are too hot - let them cool for 1 minute first

Storage

Fridge: 2 days
Freezer: 30 days
Reheat: Oven at 180°C for 5-7 minutes

Best enjoyed fresh, but can be stored and reheated. Reheating restores some crispness to the exterior.
