Instructions
Prepare the chicken
Cut chicken into serving pieces and pat dry with paper towels.
Make the marinade
Mix buttermilk, eggs, salt, pepper, paprika, and garlic powder in a bowl.
Marinate the chicken
Place chicken pieces in the marinade and refrigerate for at least 30 minutes.
Prepare the coating
Mix flour with salt, pepper, paprika, and garlic powder in a shallow dish.
Coat the chicken
Remove chicken from marinade and dredge thoroughly in the seasoned flour mixture.
Fry the chicken
Heat oil in a deep pan to 175°C and fry chicken in batches until golden brown and cooked through (internal temp 75°C).
Rest and serve
Place fried chicken on a wire rack to drain excess oil for 5 minutes before serving.
