Marinate the chicken

Combine chicken thighs with spices, olive oil, garlic, lemon juice, and chicken bouillon in a bowl. Mix well to coat evenly.

Cook the chicken

Heat a large pan over medium-high heat with olive oil. Cook chicken in batches for 6-8 minutes per side until golden and cooked through. Set aside.

Prepare the rice pilaf

Reduce heat to medium-low. Add butter and onions to the same pan, cook until translucent. Add garlic and spices, cook 1-2 minutes. Add rice and toast for 2 minutes, then pour in chicken stock. Bring to boil, cover, and simmer for 20 minutes.

Mix sliced red onion, quartered cherry tomatoes, and halved cucumber slices in a bowl. Season with salt, pepper, sumac, and lemon juice.
