Instructions
Soften rice paper
Soften a sheet of rice paper in lukewarm water until pliable.
Place on damp surface
Place the softened rice paper on a damp surface.
Layer fillings
Layer a strip of mozzarella, a few tomato slices, a basil leaf, and a small handful of arugula.
Season and drizzle
Drizzle with a tiny amount of olive oil and balsamic glaze, sprinkle with salt and pepper.
Roll into canapé
Roll tightly into a bite-sized canapé or fold into a neat bundle; seal with a light dab of water if needed.
Repeat assembly
Repeat to make about 12 canapés.
Chill and serve
Chill briefly before serving. Arrange on a cold plate with extra basil leaves.
Storage
Best served fresh. Store covered in refrigerator and consume within a few hours for optimal texture.
Notes
• Vegan mozzarella can be substituted for a plant-based version
