Instructions
Prepare cookie dough
Cream together butter and sugars until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until fully incorporated.
Combine dry ingredients
Mix flour, baking soda, and salt in a separate bowl.
Form the dough
Gradually add dry ingredients to wet mixture, then fold in chocolate chips.
Scoop and bake
Scoop dough onto a baking sheet and bake until golden brown.
Assemble cookie sandwiches
Cool cookies completely, then sandwich vanilla ice cream between two cookies.
