Instructions
Melt butter and mix sugars
Melt the butter and mix it well with the brown and white sugars until combined.
Add eggs and vanilla
Add the whole egg, egg yolk, and vanilla extract to the butter-sugar mixture and mix until smooth.
Whisk dry ingredients
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and beet powder.
Combine wet and dry ingredients
Add the dry ingredients to the wet mixture and mix gently until just combined.
Add strawberries and chocolate chips
Fold in the freeze-dried strawberries and white chocolate chips.
Scoop and chill dough
Scoop the dough onto a baking sheet (about 3 tbsp per cookie) and chill in the fridge for at least 1 hour.
Bake the cookies
Preheat oven to 175°C. Bake cookies for 11-13 minutes until edges are golden.
