Banana Layer Cake With Fluffy Southern Frosting

Instructions
Prepare bananas
Mash the ripe bananas until smooth.
Mix dry ingredients
Sift together flour, baking soda, and salt in a large bowl.
Cream butter and sugar
Beat softened butter with granulated sugar until light and fluffy.
Add eggs
Beat in eggs one at a time until fully incorporated.
Add banana and vanilla
Mix in the mashed bananas and vanilla extract.
Alternate dry ingredients and buttermilk
Add dry ingredients and buttermilk alternately, beginning and ending with dry ingredients.
Prepare cake pans
Grease and flour two 9-inch round cake pans.
Bake the cake
Divide batter between prepared pans and bake at 180°C until a toothpick inserted in the center comes out clean.
Cool the cake layers
Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
Prepare the frosting
In a heatproof bowl, combine egg whites, sugar, water, and cream of tartar. Set over simmering water and beat until stiff peaks form. Remove from heat and beat in vanilla.
Assemble and frost the cake
Place one cooled cake layer on serving plate. Spread with frosting, top with second layer, then frost top and sides generously.
