Instructions
Prepare ingredients
Peel and mince garlic and ginger. Dice onion and tomatoes. Chop spinach and chili pepper.
Sauté aromatics
Heat oil in a pot over medium heat. Add minced garlic, ginger, onion and chili. Sauté until fragrant and onion softens.
Bloom spices
Add garam masala, turmeric, cumin and coriander. Stir for 30 seconds until fragrant.
Add tomatoes and broth
Add chopped tomatoes and vegetable stock. Bring to a simmer and cook for 5 minutes to meld flavors.
Cook noodles
Add noodles, peas and coconut milk if using. Cook according to noodle package instructions, usually 3–4 minutes.
Finish with greens
Stir in spinach and cook until just wilted, about 30 seconds. Serve hot.
Storage
Best eaten fresh. Noodles soften upon storage. Add fresh greens when reheating.
