Ultimate Chocolate Lava Cookies

Instructions
Melt chocolate and butter
In a bowl over simmering water, melt the chocolate and butter together with a pinch of salt.
Whip eggs and sugar
In another bowl, whip the eggs and sugar until the mixture becomes light in color and triples in volume.
Combine chocolate with egg mixture
Add the melted chocolate and butter mixture (not hot) to the egg mixture and gently fold together in a uniform batter using circular motions.
Add flour
Add the flour and gently fold again with circular motions until fully incorporated.
Prepare ramekins
Grease ceramic ramekins with butter and dust with cocoa powder, then fill each 2/3 full with batter.
Chill batter
Place ramekins in the refrigerator for 30 minutes or up to several hours.
Bake lava cookies
Preheat oven to 180°C. Bake for exactly 10 minutes. The tops should remain flat and the centers must stay liquid. Leave in ramekins for a minute, then invert onto plates.
Serve immediately
Serve hot with ice cream, whipped cream, berries, or any desired toppings.
Storage
Best served fresh and hot. Store in the refrigerator covered. Reheat gently to maintain the molten center.
