Base

plain biscuits (crushed)

250 g

unsalted butter (melted)

125 g

sweetened condensed milk

golden syrup

crystallized ginger (chopped)

Prepare the base mixture

Crush the plain biscuits into fine crumbs and chop the crystallized ginger into small pieces.

Melt the butter

Melt the unsalted butter in a saucepan over low heat.

Combine wet ingredients

Add the sweetened condensed milk and golden syrup to the melted butter, stirring until well combined.

Add spices

Stir in the ground ginger and chopped crystallized ginger until evenly distributed.

Mix with biscuit crumbs

Remove from heat and quickly stir in the crushed biscuit crumbs until fully coated.

Press into tin

Transfer the mixture to a lined baking tin and press down firmly with the back of a spoon to create an even layer.

Refrigerate for at least 2 hours or until the slice is firm and set.
