Raspberry Tiramisu
Ingredients
Raspberry Sauce
homemade raspberry juice (liquid)

Raspberry Mascarpone Cream
heavy cream (cold)
360 ml
mascarpone cheese (cold)
450 g
granulated sugar (granular)
150 g
vanilla extract (liquid)

Ladyfingers
ladyfingers (dry)

Topping
homemade raspberry sauce (liquid)
200 g
fresh raspberries (fresh)
150 g
mint leaves (fresh)

Instructions
Whip cream
In a large bowl, whip the heavy cream until stiff peaks form.
Mix mascarpone cream
In a separate bowl, mix the mascarpone cheese, sugar and vanilla extract until smooth.
Combine cream and mascarpone
Fold the whipped cream into the mascarpone mixture gently.
Assemble tiramisu
Dip ladyfingers in raspberry juice and layer in the dish. Cover with half the mascarpone cream.
Repeat layers
Repeat layers with remaining ladyfingers and cream.
Top with raspberry sauce
Spread raspberry sauce on top and decorate with fresh raspberries and mint leaves.
