Whip cream

In a large bowl, whip the heavy cream until stiff peaks form.

Mix mascarpone cream

In a separate bowl, mix the mascarpone cheese, sugar and vanilla extract until smooth.

Mix until just combined to avoid curdling

Combine cream and mascarpone

Fold the whipped cream into the mascarpone mixture gently.

Dip ladyfingers in raspberry juice and layer in the dish. Cover with half the mascarpone cream.
