3 piece
butter (melted)
115 g
brown sugar
150 g
egg
2 piece
vanilla extract
5 ml
all-purpose flour
250 g
baking powder
5 g
salt
3 g
cinnamon
3 g
chocolate chips
180 g
Instructions
Preheat oven and prepare pan
Set your oven to 175°C. Lightly grease a loaf pan and line it with parchment paper.
Mash bananas
In a large bowl, mash 3 very ripe bananas until mostly smooth — a few small chunks are okay.
Add wet ingredients
Add melted butter, brown sugar, eggs, and vanilla extract. Whisk everything together until well blended.
Mix dry ingredients
In a separate bowl, mix flour, baking powder, salt, and cinnamon until evenly combined.
Combine wet and dry ingredients
Pour the dry mixture into the wet ingredients and fold gently until just mixed — don't overwork the batter.
Add chocolate chips
Stir through most of the chocolate chips, keeping a handful aside for the top.
Prepare banana topping
Slice a banana in half and place on top and sprinkle with the remaining chocolate chips.
Bake the bread
Bake for 50–60 minutes, or until a skewer inserted in the center comes out clean (a little melted chocolate is fine).
Cool the bread
Let the loaf cool in the pan for 10 minutes, then lift it out and let it cool completely on a wire rack before slicing.
