Instructions
Preheat oven
Preheat oven to 175°C and line baking sheets with parchment paper.
Prepare churro coating
Mix granulated sugar and ground cinnamon in a shallow bowl for the churro coating.
Cream butter and cream cheese
Beat softened butter and cream cheese together until light and fluffy.
Add sugars
Add granulated sugar and brown sugar, beat until well combined.
Add egg and vanilla
Beat in the egg and vanilla extract until smooth.
Add dry ingredients
Gradually add flour, baking powder, and salt, mixing until just combined.
Prepare cheesecake filling
Beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
Shape cookies
