Pizza al Limone
Ingredients
Dough
wheat flour all purpose (room temperature)
250 g
water
150 ml
olive oil
15 ml
active dry yeast
7 g
granulated sugar
5 g
salt

Toppings
mozzarella (shredded)
150 g
lemon (zested, juiced)

Instructions
Make the dough
Combine flour, yeast, sugar and salt in a bowl. Add warm water and olive oil, then mix to form a soft dough.
Knead and rest the dough
Knead the dough on a lightly floured surface for 8-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover and let rise for 45 minutes.
Preheat the oven
Preheat oven to 250°C with a baking sheet or pizza stone inside.
Shape the pizza base
Divide dough in half. On a floured surface, stretch or roll each piece into a thin round about 30 cm in diameter.
Add toppings
Drizzle each base with olive oil, sprinkle with salt and black pepper. Top with shredded mozzarella and zest of lemon. Add a squeeze of fresh lemon juice.
Bake the pizza
Carefully transfer the pizza onto the hot baking sheet. Bake for 8-10 minutes until the crust is golden and cheese is bubbling.
Finish and serve
Remove from oven, drizzle with a little more olive oil and serve immediately while hot.
