urad dal

Instructions
Prepare ingredients
Chop onion, mince garlic, chop green chilies, and measure all spices.
Temper spices
Heat oil in a pan, add mustard seeds, cumin seeds, chana dal, and urad dal. Fry until dals turn golden.
Add aromatics
Add chopped onion, garlic, and green chilies. Sauté until onions become translucent.
Add curry leaves
Add fresh curry leaves and fry for 30 seconds until they become crisp.
Add spices and rice
Add turmeric, salt, and cooked rice. Mix gently to combine all flavors.
Finish and serve
Add roasted peanuts, mix gently, and serve hot as a quick lunch box meal.
