Instructions
Prepare chicken coating
Combine the cubed chicken with salt, black pepper, nutritional yeast, and baking powder in a bowl.
Make batter
In a separate bowl, whisk together the egg, cold water, avocado oil, cornstarch, and flour until smooth.
Coat chicken
Pour the egg batter over the seasoned chicken and let it rest for 10-15 minutes.
Fry chicken
Heat oil to 175°C, then fry chicken pieces until internal temperature reaches 74°C at the thickest part.
Drain chicken
Remove chicken from oil and place on paper towels to absorb excess oil.
Prepare sauce base
In a bowl, combine honey, soy sauce, ketchup, rice vinegar, toasted sesame oil, and sesame seeds.
Cook garlic
Warm avocado oil in a wok or high-sided pan over medium-low heat, then cook minced garlic until fragrant for 1-2 minutes.
Thicken sauce
Add the prepared sauce mixture and cornstarch-water slurry to the wok, stirring until the sauce thickens.
Combine and serve
Remove from heat, add the fried chicken to the sauce and toss to coat. Serve immediately topped with chopped green onions.
