Prepare ingredients

Dice onion and carrot, mince garlic, chop green beans, and slice green onions. Beat the eggs in a small bowl.

Heat the wok

Place wok over high heat and add sunflower oil. Heat until shimmering.

Pour beaten eggs into the hot wok and quickly scramble until just set. Remove to a plate.

Add onion, garlic, carrot, and green beans to the wok. Stir-fry until vegetables are tender-crisp.
